Crispy Garlic Herb Skillet Potatoes

These skillet potatoes are crispy on the outside and tender inside, cooked with garlic and simple herbs for maximum flavor. They make the perfect easy side dish for breakfast, lunch, or dinner.

Ingredients
  

  • 2 pounds Yukon Gold or red potatoes diced
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or rosemary
  • 2 tablespoons fresh parsley chopped (optional)

Method
 

  1. Wash and dice the potatoes into evenly sized cubes. Soak in cold water for 20–30 minutes if desired, then drain and dry thoroughly.
  2. Heat a large skillet over medium heat. Add olive oil and allow it to warm.
  3. Add the potatoes in a single layer. Cook undisturbed for 4–5 minutes until the bottom begins to turn golden brown.
  4. Flip and continue cooking, stirring occasionally, for 12–15 minutes until tender and crispy on all sides.
  5. Add minced garlic, salt, pepper, and dried herbs. Cook for another 1–2 minutes until fragrant.
  6. Remove from heat and sprinkle with fresh parsley before serving.

Notes

  • For extra flavor, add diced onions or bell peppers during the last 8–10 minutes of cooking.
  • Reheat leftovers in a skillet over medium heat to restore crispiness.
  • You can parboil the potatoes for 5–7 minutes beforehand to reduce overall cooking time.
