Crispy Chickpea Salad Cups

These Crispy Chickpea Salad Cups are a healthy, flavorful, and fun-to-eat appetizer or light meal. The crispy chickpeas are roasted to golden perfection, adding crunch and flavor to a fresh salad of greens, cucumbers, tomatoes, and red onion.

Ingredients
  

For the Crispy Chickpeas:

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

For the Salad:

  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 red onion chopped
  • 1 cup mixed greens
  • 12 lettuce leaves

For the Dressing:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Roast chickpeas at 400°F with olive oil, paprika, garlic powder, salt, and pepper for 25-30 minutes.
  • Prepare the salad ingredients and mix together.
  • Whisk together olive oil, lemon juice, mustard, salt, and pepper for the dressing.
  • Assemble the salad in lettuce cups and top with crispy chickpeas.
  • Drizzle with dressing and serve immediately.
