Ingredients
  

  • 12 oz pasta penne, rigatoni, or fettuccine
  • 1 lb Italian sausage
  • 2 cups roasted butternut squash
  • 3 tbsp butter
  • 3 cloves garlic
  • ½ cup onion
  • ¾ cup heavy cream
  • ½ cup Parmesan
  • 2 cups spinach
  • Salt pepper, red pepper flakes

Method
 

  1. Cook pasta, reserve water.
  2. Brown sausage and set aside.
  3. Sauté garlic and onion in butter.
  4. Blend squash with cream into sauce.
  5. Add sauce, Parmesan, sausage, and spinach to skillet.
  6. Toss with pasta and serve hot.
