Ingredients
  

  • 1 lb Italian sausage
  • 1 16 oz package gnocchi
  • 2 cups roasted butternut squash
  • 3 tbsp butter
  • 3 cloves garlic
  • 1 shallot chopped
  • 1 tsp thyme 1 tsp sage
  • ¾ cup heavy cream
  • ½ cup Parmesan
  • Salt & pepper to taste

Method
 

  1. Cook gnocchi and set aside.
  2. Brown sausage; remove.
  3. Sauté garlic, shallot, and herbs in butter.
  4. Blend squash with cream into a smooth sauce.
  5. Add sauce and Parmesan to skillet; stir until creamy.
  6. Toss in sausage and gnocchi; simmer 2–3 minutes.
  7. Serve topped with thyme and Parmesan.
