Country Kitchen Cheesy Chicken Bake

This Country Kitchen Cheesy Chicken Bake combines tender chicken and vegetables in a rich, creamy sauce topped with plenty of melted cheddar. It’s an easy, comforting casserole made for cozy family dinners and fuss-free weeknights.

Ingredients
  

  • 4 cups cooked chicken shredded or diced
  • 2 cups frozen mixed vegetables thawed and drained
  • 1 can 10.5 ounces condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 2 cups shredded sharp cheddar cheese divided
  • 1 cup buttery crackers crushed
  • 2 tablespoons unsalted butter melted

Method
 

  1. Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish.
  2. In a large bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, onion powder, thyme, salt, and black pepper. Stir until smooth.
  3. Add the cooked chicken, mixed vegetables, and 1 cup of shredded cheddar cheese. Stir until everything is evenly coated with the creamy mixture.
  4. Spread the chicken mixture evenly in the prepared baking dish.
  5. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
  6. Combine the crushed crackers with the melted butter in a small bowl. Sprinkle the mixture over the cheese.
  7. Bake uncovered for 25–30 minutes, or until the filling is bubbling around the edges and the topping is golden.
  8. Remove from the oven and let the casserole rest for 5–10 minutes before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat in the microwave or cover and warm in a 350°F oven until heated through.
  • For a different flavor, substitute Monterey Jack or Colby Jack for some of the cheddar. Broccoli, peas, corn, carrots, or green beans can also be used in place of the mixed vegetables.
  • For extra crunch, increase the cracker topping slightly or use seasoned breadcrumbs. If using frozen vegetables, thaw and drain them well before assembling the casserole so the filling stays creamy rather than watery.
