Cottage Cheese Chicken Salad

A light yet creamy chicken salad made with cottage cheese instead of heavy dressings. High in protein, easy to prepare, and perfect for sandwiches, wraps, or bowls.

Ingredients
  

  • 2 cups cooked chicken finely chopped
  • 1 cup cottage cheese
  • 2 tablespoons mayonnaise optional, for extra richness
  • 1 tablespoon Dijon mustard
  • 1 celery stalk finely diced
  • 2 tablespoons red onion minced
  • Salt to taste
  • Black pepper to taste
  • Optional: fresh herbs like parsley or dill

Method
 

  1. In a mixing bowl, add the cottage cheese and stir until slightly creamy.
  2. Add the chopped chicken and mix gently to combine.
  3. Stir in mayonnaise and Dijon mustard if using.
  4. Add celery and red onion, mixing evenly.
  5. Season with salt and black pepper to taste.
  6. Chill for 15–30 minutes before serving for best flavor.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a smoother texture, blend the cottage cheese before mixing.
  • This salad works well in sandwiches, wraps, or served with crackers.
