Make the Dough
In a bowl, whisk flour, baking powder, and salt.
In a separate bowl, cream butter and sugar until light and fluffy.
Add egg and vanilla; mix until combined.
Mix in strawberry jam or powder and food coloring if using.
Gradually add dry ingredients until a soft dough forms.
Chill the Dough
Cover and refrigerate dough for 30 minutes.
Chilling prevents spreading and helps cookies bake evenly.
Shape & Bake
Preheat oven to 350°F (175°C).
Scoop dough into tablespoon-sized balls.
Place on a parchment-lined baking sheet.
Bake for 9–11 minutes, until edges are set but centers remain soft.
Cool completely before dipping.
Melt the Chocolate
Melt chocolate wafers until smooth.
Stir gently to avoid air bubbles.
Dip the Cookies
Dip half of each cooled cookie into melted chocolate.
Place on parchment paper to set.
Decorate (Optional)
Drizzle with white chocolate or sprinkle freeze-dried strawberries while chocolate is still wet.
