Chilled Gazpacho Shots with Fresh Veggies

These Chilled Gazpacho Shots with Fresh Veggies are a refreshing and vibrant way to enjoy the classic Spanish cold soup. 

Ingredients
  

  • 4 medium tomatoes chopped
  • 1 cucumber peeled and chopped
  • 1 red bell pepper chopped
  • 1/2 small red onion chopped
  • 1 garlic clove minced
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp lemon juice optional
  • Salt and pepper to taste
  • 1/4 cup cold water
  • Fresh herbs for garnish

Instructions
 

  • Blend tomatoes, cucumber, bell pepper, onion, garlic, olive oil, vinegar, lemon juice, salt, and pepper until smooth. Add cold water for desired consistency.
  • Chill in the fridge for at least 2 hours.
  • Pour into shot glasses and garnish with chopped veggies and fresh herbs.
  • Serve and enjoy!
