Chilled Gazpacho Shots with Fresh Veggies

These Chilled Gazpacho Shots with Fresh Veggies are a refreshing and vibrant way to enjoy the classic Spanish cold soup. 

Ingredients
  

  • 4 medium tomatoes chopped
  • 1 cucumber peeled and chopped
  • 1 red bell pepper chopped
  • 1/2 small red onion chopped
  • 1 garlic clove minced
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp lemon juice optional
  • Salt and pepper to taste
  • 1/4 cup cold water
  • Fresh herbs for garnish

Method
 

  1. Blend tomatoes, cucumber, bell pepper, onion, garlic, olive oil, vinegar, lemon juice, salt, and pepper until smooth. Add cold water for desired consistency.
  2. Chill in the fridge for at least 2 hours.
  3. Pour into shot glasses and garnish with chopped veggies and fresh herbs.
  4. Serve and enjoy!
