- Preheat the oven to 400°F (200°C).
- Toss Brussels sprouts with olive oil, salt, and pepper.
- Spread them cut-side down in a baking dish and roast for 20 minutes.
- In a small bowl, mix cream, garlic, and half of the cheese.
- Remove sprouts from the oven and pour the cheese mixture over them.
- Sprinkle remaining cheese on top.
- Return to the oven and bake for 15–20 minutes until bubbly and lightly browned.
- Rest for 5 minutes before serving.
