Cauliflower Pizza Bites

These Cauliflower Pizza Bites are cheesy, savory, and packed with pizza flavor—all in a healthier, low-carb version. Made with a cauliflower base, melty mozzarella, and your favorite toppings, they’re the perfect guilt-free snack or party appetizer. Kid-friendly, customizable, and irresistibly delicious!

Ingredients
  

  • 1 medium head cauliflower about 4 cups florets
  • 1 large egg
  • 1 cup shredded mozzarella cheese divided
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup pizza sauce
  • Optional toppings: mini pepperoni diced bell peppers, sliced olives, fresh basil

Method
 

  1. Preheat oven to 400°F (200°C). Grease or line a muffin tin.
  2. Pulse cauliflower into rice texture, steam/microwave, then squeeze dry.
  3. Mix cauliflower with egg, ½ cup mozzarella, Parmesan, and seasonings.
  4. Press mixture firmly into muffin tin cups.
  5. Bake 12–15 minutes until golden.
  6. Top with pizza sauce, mozzarella, and toppings.
  7. Bake 5 more minutes until cheese melts.
  8. Cool slightly and serve warm.

Notes

  • Best Served With: Marinara dip, ranch, or a side salad for a light meal.
