Carrot Cake Overnight Oats

Creamy, spiced carrot cake overnight oats made with wholesome ingredients. This easy make-ahead breakfast tastes like dessert while keeping mornings simple and satisfying.

Ingredients
  

  • ½ cup rolled oats
  • ½ cup milk of choice
  • ¼ cup yogurt
  • ¼ cup finely grated carrot
  • 1 –2 tablespoons maple syrup or honey
  • ½ teaspoon cinnamon
  • teaspoon nutmeg
  • Pinch of salt
  • 1 tablespoon chopped walnuts or pecans optional
  • 1 tablespoon raisins optional

Method
 

  1. Add oats, milk, yogurt, grated carrot, sweetener, spices, and salt to a jar or bowl.
  2. Stir well until fully combined.
  3. Cover and refrigerate for at least 6 hours or overnight.
  4. Stir again before serving and adjust sweetness if needed.
  5. Top with nuts, raisins, or extra yogurt if desired.

Notes

  • Store in an airtight container for up to 4 days
  • Add chia seeds for thicker texture
  • Swap yogurt for cottage cheese or protein yogurt for extra protein
  • Thin with milk before serving if oats become too thick
