If you’re craving the warm, spiced flavors of carrot cake but want a healthier option, these Carrot Cake Energy Bites are the perfect solution! Packed with wholesome ingredients like oats, nuts, dates, and shredded carrots, these no-bake treats are nutritious, delicious, and easy to make.

Ingredients
  

  • 1 cup rolled oats
  • ½ cup shredded carrots
  • ½ cup Medjool dates pitted
  • ½ cup walnuts or pecans
  • 2 tbsp almond butter
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp shredded coconut plus extra for rolling

Instructions
 

  • Combine oats, carrots, dates, nuts, almond butter, cinnamon, nutmeg, and vanilla in a food processor. Blend until sticky.
  • Scoop and roll into tablespoon-sized balls.
  • Roll each ball in shredded coconut to coat.
  • Chill for 30 minutes to set.
  • Store in the fridge or freezer for a quick, healthy snack.
