Carrot Cake Energy Bites

- 1 cup rolled oats
- ½ cup shredded carrots
- ½ cup Medjool dates pitted
- ½ cup walnuts or pecans
- 2 tbsp almond butter
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp vanilla extract
- 2 tbsp shredded coconut plus extra for rolling
Combine oats, carrots, dates, nuts, almond butter, cinnamon, nutmeg, and vanilla in a food processor. Blend until sticky.
Scoop and roll into tablespoon-sized balls.
Roll each ball in shredded coconut to coat.
Chill for 30 minutes to set.
