Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix eggs, sugar, oil, and vanilla until smooth.
- Stir the dry ingredients into the wet mixture until just combined.
- Fold in the grated carrots gently.
- Pour batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a rack to cool fully.
