Campfire Lemon Herb Chicken Thighs
These Campfire Lemon Herb Chicken Thighs are the perfect combination of juicy, tender chicken with a zesty and aromatic lemon herb marinade.
- 4 bone-in skin-on chicken thighs
- 2 tablespoons olive oil
- 1 lemon zested and juiced
- 3 cloves garlic minced
- 1 tablespoon fresh thyme or 1 tsp dried thyme
- 1 tablespoon fresh rosemary or 1 tsp dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley for garnish
- 1 tablespoon honey optional
Combine olive oil, lemon zest, lemon juice, garlic, thyme, rosemary, salt, pepper, and honey (optional) in a bowl.
Coat chicken thighs with marinade and refrigerate for at least 30 minutes.
Grill over medium-high heat or campfire for 25-30 minutes, turning occasionally, until fully cooked.
