Campfire Lemon Herb Chicken Thighs

These Campfire Lemon Herb Chicken Thighs are the perfect combination of juicy, tender chicken with a zesty and aromatic lemon herb marinade.

Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon zested and juiced
  • 3 cloves garlic minced
  • 1 tablespoon fresh thyme or 1 tsp dried thyme
  • 1 tablespoon fresh rosemary or 1 tsp dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley for garnish
  • 1 tablespoon honey optional

Instructions
 

  • Combine olive oil, lemon zest, lemon juice, garlic, thyme, rosemary, salt, pepper, and honey (optional) in a bowl.
  • Coat chicken thighs with marinade and refrigerate for at least 30 minutes.
  • Grill over medium-high heat or campfire for 25-30 minutes, turning occasionally, until fully cooked.
  • Garnish with parsley and serve hot.
