Heat olive oil in a large skillet over medium heat. Add diced potatoes, season with salt and pepper, and cook for 8–10 minutes until golden and tender, stirring occasionally.
Push potatoes to one side and add sausage. Cook until browned, then stir everything together.
Add bell pepper, onion, and garlic. Cook for 3–4 minutes until vegetables soften.
Make four small wells in the skillet and crack an egg into each one.
Cover the pan and cook for 4–6 minutes, until egg whites are set and yolks are to your liking.
Sprinkle cheese over the skillet, cover briefly to melt, then remove from heat.
Garnish if desired and serve hot.
