Ingredients
  

Cookie Dough:
  • ½ cup unsalted butter softened
  • ½ cup brown sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ¼ tsp salt
Filling:
  • ½ cup chopped pecans
  • ¼ cup brown sugar
  • 3 tbsp corn syrup
  • 1 tbsp melted butter
  • ½ tsp vanilla extract
  • Pinch of salt

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar; add egg yolk and vanilla.
  3. Stir in flour and salt to form dough.
  4. Roll into balls; press center to form wells.
  5. Mix filling ingredients; spoon into wells.
  6. Bake 10–12 minutes until golden.
  7. Cool completely before serving.
