Preheat your grill to low heat (around 275–300°F) using indirect heat.
Remove the membrane from the back of the ribs and pat them dry.
Rub olive oil over the ribs, then coat evenly with the spice mixture.
Place ribs on the grill over indirect heat and cook for 2.5–3 hours.
(Optional) Wrap ribs in foil halfway through cooking for extra tenderness.
In a small bowl, mix BBQ sauce, brown sugar, and apple cider vinegar.
During the last 20 minutes, brush the ribs generously with the sauce.
Continue grilling until the sauce is sticky and caramelized.
Remove from grill, let rest for 5–10 minutes, then slice and serve.
