BBQ Chicken Salad

A hearty and colorful salad loaded with smoky BBQ chicken, crisp greens, fresh vegetables, and a creamy dressing. Perfect for a quick lunch or a light yet satisfying dinner. It’s a balanced, flavor-packed dish that’s both refreshing and filling.

Ingredients
  

  • 2 cups cooked chicken grilled or shredded
  • 1/2 cup BBQ sauce
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup corn fresh, canned, or grilled
  • 1/4 cup red onion thinly sliced
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup shredded cheddar cheese
  • 1/2 avocado sliced
  • 1/4 cup tortilla strips optional
  • 1/2 cup ranch or BBQ ranch dressing

Method
 

  1. In a bowl, toss the cooked chicken with BBQ sauce until well coated.
  2. Prepare all vegetables by washing, chopping, and slicing as needed.
  3. In a large salad bowl, add the chopped lettuce as the base.
  4. Layer on tomatoes, corn, black beans, red onion, and cheese.
  5. Add the BBQ chicken evenly over the salad.
  6. Top with avocado slices and tortilla strips if using.
  7. Drizzle with dressing just before serving.
  8. Toss lightly and serve immediately.

Notes

  • Store leftovers in an airtight container for up to 2 days (without dressing).
  • Swap ranch for a lighter vinaigrette if preferred.
  • Add grilled peppers or cucumbers for extra freshness.
  • For meal prep, keep components separate and assemble when ready to eat.
