Method
- Slice the hard-boiled eggs in half and remove the yolks.
- Mash the yolks with avocado, Greek yogurt, lime juice, lime zest, and mustard.
- Season with salt and pepper, and spoon or pipe the mixture into the egg whites.
- Garnish with cilantro or parsley and an extra squeeze of lime juice.
- Serve immediately or refrigerate for up to 2 hours.
