Asparagus Stuffed Chicken Breast

Tender chicken breasts filled with creamy cheese and fresh asparagus, then baked until juicy and flavorful. This dish is simple enough for a weeknight but elegant enough to serve to guests.

Ingredients
  

  • 2 large chicken breasts
  • 8 –10 asparagus spears trimmed
  • 4 oz cream cheese softened
  • ½ cup shredded mozzarella or provolone cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast and gently pound to even thickness.
  3. In a bowl, mix cream cheese, shredded cheese, garlic powder, salt, and pepper.
  4. Stuff each chicken breast with the cheese mixture and asparagus spears.
  5. Heat olive oil in an oven-safe skillet over medium heat and sear chicken on both sides until lightly golden.
  6. Transfer skillet to the oven and bake for 18–22 minutes, until the chicken is cooked through.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • You can add herbs like thyme or parsley to the filling for extra flavor.
  • Serve with roasted potatoes, rice, or a simple side salad.
