Method
- Preheat oven to 350°F (175°C) and grease a mini muffin pan.
- Whisk together flour, baking powder, salt, cinnamon, nutmeg, and brown sugar.
- In a separate bowl, mix egg, apple cider, milk, melted butter, and vanilla.
- Pour wet ingredients into dry ingredients; stir gently until just combined.
- Spoon batter into muffin cups, filling ¾ full.
- Bake 12–15 minutes or until a toothpick comes out clean.
- Let cool slightly; serve warm with toppings of choice.
Notes
- Do not overmix the batter to keep bites fluffy.
- Add small apple chunks for extra flavor.
