Apple Cider Pancake Bites

Cozy, bite-sized pancakes infused with apple cider, warm cinnamon, and nutmeg—perfect for breakfast, brunch, or a sweet snack. Soft, fluffy, and lightly sweet, these little bites are easy to make and even easier to devour!

Ingredients
  

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 tbsp brown sugar
  • 1 large egg
  • ¾ cup apple cider
  • ¼ cup milk
  • 2 tbsp melted butter plus extra for greasing
  • 1 tsp vanilla extract
  • Optional: powdered sugar maple syrup, or whipped cream for serving

Method
 

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. Whisk together flour, baking powder, salt, cinnamon, nutmeg, and brown sugar.
  3. In a separate bowl, mix egg, apple cider, milk, melted butter, and vanilla.
  4. Pour wet ingredients into dry ingredients; stir gently until just combined.
  5. Spoon batter into muffin cups, filling ¾ full.
  6. Bake 12–15 minutes or until a toothpick comes out clean.
  7. Let cool slightly; serve warm with toppings of choice.

Notes

  • Do not overmix the batter to keep bites fluffy.
  • Add small apple chunks for extra flavor.
  • Store in an airtight container for 2 days at room temperature or 4–5 days in the fridge.
