4th Of July Fruit Pizza

This festive fruit pizza features a soft sugar cookie crust topped with a light, creamy cheesecake layer and fresh berries. It’s a refreshing and crowd-pleasing dessert perfect for summer celebrations.

Ingredients
  

For the crust:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 teaspoons lemon zest
  • 1 1/2 teaspoons lemon extract
  • 1 large egg
For the topping:
  • 8 oz cream cheese softened
  • 1 1/3 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup cold heavy cream
For decoration:
  • 1 pound strawberries sliced
  • 6 oz blueberries

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a pizza pan or line a baking tray with parchment paper.
  2. In a bowl, mix flour, baking powder, and salt. Set aside.
  3. In another bowl, beat butter and sugar until smooth. Add lemon zest, lemon extract, and egg, mixing until combined.
  4. Gradually add the dry ingredients and mix until a soft dough forms.
  5. Press the dough evenly into a 10-inch circle on your prepared pan.
  6. Bake for 15–18 minutes or until lightly golden. Let it cool completely.
  7. For the topping, beat cream cheese, powdered sugar, vanilla, and salt until smooth.
  8. Slowly add heavy cream while mixing, then beat on high until light and fluffy.
  9. Spread the topping evenly over the cooled crust.
  10. Arrange strawberries and blueberries on top in your desired pattern.
  11. Slice and serve fresh for best results.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For best texture, add fruit just before serving.
  • You can swap lemon extract for vanilla or almond extract if preferred.
  • Avoid overly juicy fruits like watermelon to prevent sogginess.
