Ingredients
  

  • 1 cup pumpkin puree not pumpkin pie filling
  • 2 large eggs
Optional Add-ins:
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 1 tbsp maple syrup

Method
 

  1. In a bowl, whisk pumpkin puree and eggs until smooth.
  2. Heat a nonstick skillet over medium heat, lightly greased.
  3. Spoon small rounds of batter (2–3 tbsp each) onto the skillet.
  4. Cook 2–3 minutes per side until golden and set.
