Heat a large skillet over medium-high heat. Add the olive oil if needed.
Add the ground beef and cook for 5–6 minutes, breaking it into small crumbles until browned.
Drain any excess grease from the skillet.
Stir in the minced garlic, onion powder, Italian seasoning, paprika, salt, and black pepper.
Cook for another 1–2 minutes until the garlic becomes fragrant.
Reduce the heat to low and sprinkle the cheddar and mozzarella evenly over the beef.
Cover the skillet for 1–2 minutes until the cheese is fully melted.
Sprinkle with chopped parsley if using and serve immediately.
